A beautiful Indian summer, grape berries withering under the action of wind, cold and botrytis… and the harvester's hand selecting them in late November.
Then a few barrels, a few months, fermentation taking its time, a gentle ageing process…
Too rich in sugars at harvest, this wine cannot bear the Côtes de Gascogne appellation — so we call it a Wine from Over-Ripe Grapes.
Nose at once dense and refined, revealing its power on aeration with frosted notes of quince, dried figs, cinnamon and honey. The palate is full, sweet and balanced, with ever-present freshness. Aromas from the nose return, joined by liquorice; oak remains discreet.
